Hello, I haven't played thief in several years. What program, and how do I play them now?

First you'll need to patch Thief Gold with Tfix -https://www.ttlg.com/forums/showthread.php?t=134733 and Thief 2 with T2fix - https://www.ttlg.com/forums/showthread.php?t=149669 . Read which one would you want to install (there is a difference between tfix and tfix lite). If you're just playing the original games you might want to install the bonus (mods) that come with the installer ,however if you're going to be playing fan missions i suggest you don't install any mods/enhancements as they will cause some weird stuff in some fan missions.To play fan missions i would highly suggest you install AngelLoader - https://www.ttlg.com/forums/showthread.php?t=149706 the most up to date and still in development loader , it comes with some nice options too ( keeps saved games even when you uninstall a FM , ratings etc) or you could just use Fmsel - you get it when installing Tfix and T2fix , instructions how to use it -https://www.ttlg.com/forums/showthread.php?t=140093
